Tender, juicy zucchini spears are baked to a beautiful golden crisp in a savory cheese crust, then paired with a cool, velvety yogurt sauce. Brightened with a splash of fresh lemon juice and fresh herbs, it’s a light, vibrant dish that delivers incredible flavor in every single bite.
Preheat your oven to 350°F (180°C). Make sure the oven is fully heated before the zucchini goes in.
Cut the zucchini into sticks roughly 2 inches (5 cm) long and about half an inch (1.5–2 cm) thick.
Transfer the zucchini to a large mixing bowl. Drizzle with the oil and toss thoroughly until every piece is evenly coated.
Add the breadcrumbs, grated cheese (such as Parmesan or Gran Biraghi), salt, paprika, and black pepper. Give it a good mix to make sure the seasoning and cheese coating stick nicely to each spear.
Arrange the zucchini spears in a single layer on a baking sheet lined with parchment paper. Bake for 25–30 minutes until beautifully golden and crisp.
While the zucchini is baking, prep the sauce. Toss the Greek yogurt, garlic, parsley, lemon juice, and a pinch of salt into a blender. Pulse just a few times until smooth and combined — don't overblend.
Remove the hot zucchini from the oven, transfer to a serving platter, and serve immediately alongside the chilled yogurt sauce.
