Ingredients

  • Turkey fillet
    1,2 kg
  • Honey
    80 g
  • Whole Grain mustard
    80 g
  • Black pepper
    0,5 tsp.
  • Ground coriander
    0,5 tsp.
  • Salt
    0,5 tsp.
  • Sunflower oil
    4 tbsp

Cooking instructions

  • 1.

Rinse the turkey fillet thoroughly under cold water to remove any residue or small bone fragments, then pat it dry with paper towels. Make several shallow cuts all over the meat to help it absorb the marinade better.

  • 2.

In a large bowl, mix together the whole-grain mustard, honey, sunflower oil, salt, black pepper, and ground coriander. Stir until you get a smooth, thick marinade.

  • 3.

Place the turkey fillet in a deep dish or a resealable bag. Spread the marinade evenly over the meat, rubbing it in well on all sides. Cover the dish with plastic wrap or seal the bag and refrigerate overnight (10–12 hours).

  • 4.

About 30 minutes before baking, take the fillet out of the refrigerator to let it come to room temperature - this ensures it cooks evenly.

  • 5.

Preheat the oven to 180°C (350°F). Transfer the turkey along with the marinade into a baking dish, cover with foil, and bake for 40 minutes.

  • 6.

Remove the foil and continue baking for another 20-30 minutes, until golden brown. While it’s baking, occasionally spoon some of the sauce from the bottom of the dish over the meat to keep it moist and flavorful.
